{If only I looked this adorable while cooking}
With both Matt and I working full-time it’s sometimes difficult to come home in the evenings and prepare a healthy and delicious meal. There have been way too many times when we have no idea what to cook and end up ordering take out. We’ve finally established a routine with meal planing and I wanted to share a few of my favorite go-to recipes that aren’t too time consuming, are easy to pair with a quick green veggie, and are totally doable after a long work day.
+ Salmon Cakes – Literally so simple and delicious.
+ Spaghetti Squash with Chicken Sausage, Parmesan, and Pine Nuts -Best in the Fall when spaghetti squash is in season.
+ Prosciutto Wrapped Chicken Thighs – Such an amazing blend of flavors.
+ Shrimp and Grits with Kale and Crispy Prosciutto – I’m not Southern but I love shrimp and grits — this recipe is incredible. {Pretty much all of Natalie’s recipes are.}
+ Lemon Garlic Spaghetti – So easy and so gourmet tasting.

I will have to try out the Spaghetti Squash! We make Salmon cakes all the time too. Other go to meals- Greek Salad with Shrimp, Tacos- always easy, and Ravioli (I buy the fresh kind at our farmers market) it is easy to whip together fast Can’t wait to check out your recipes.

Lemon garlic wheat pasta sounds delish.
I make a healthy mushroom Bolognese often and then just make hubby some meat on the side. Also, fish tacos is a go-to for us.

Love these recipes. My go to meals are:
– Mushroom and Swiss turkey burgers
– Shrimp tacos
– Salads (pretty much any kind)

I always make sure I have some cooked quinoa in the fridge, I’m always making up recipes with it. The lemon/garlic pasta sounds soo good!

Pasta free lasagne using sliced aubergines.
Also I love butternut squash and sage feta lasagne (yes we love lasagne in our house!)

Great recipes!!! I love lemon garlic pasta. Like Gaby, I love to cook quinoa on Sunday nights. I add different vegetables and proteins to it throughout the week to mix it up.
